Hummus

2 cans garbanzo beans

1/2 cup Tahini (sesame seed paste)

1 Tbsp. lemon juice

1/3 cup olive oil

1/4-1/2 cup oil

Pinch of salt

6 cloves of garlic

 

Mix in food processor till smooth. May add hot sauce or dried red peppers. Serve on pita bread or with pita chips.

I am on vacation at some very good friends of mine, in Portland, Oregon. I met Jeff and Sue on one of my trips to Guatemala. We have been on four trips together. One summer they came to Minnesota and spent a few days with Chuck and I. We showed them Unclaimed Freight and Mille Lacs Lake and went out for dinner with some mutual friends in Monticello. Whenever they write to me they still mention Unclaimed Freight, that is one of their favorite places in Minnesota. So when I knew I was going to Oregon, I had to stop up to Unclaimed and buy them each a little gift.

They have invited me many times to come out to Oregon and I finally got my work schedule arranged to go. They have a very full week planned for me, going white water rafting, salmon fishing and for a ride in their airplane (they both are pilots). They do a lot of canning of the fresh produce from this area. The first day here we went to the farmers market where they have wonderful fruits and vegetables. The blackberries and peaches are the best! One of the big crops is hazelnuts, so I had to buy some of them to bring home. They made some homemade hummus that I thought you might like to try with pita bread; it is very tasty.
