Sheri Greenwaldt made for this cake for me for my birthday. She got the recipe from “Chef in Training.” This recipe is easy fast, beautiful and yummy!
1 box white cake mix, and the ingredients it calls for
1 cup boiling water
1 (3 oz.) packet of strawberry Jell-O
1 cup cold water
8 oz Cool Whip, thawed
1/4 cup powdered sugar
1/4 tsp. almond extract
Sliced fresh strawberries
Bake the cake according to the box directions in a 9×13 pan. When cake is done, let cool for about 15 minutes.
While cake is cooling, boil water in a medium sauce pan over medium heat on stove top. Add Jell-O packet to boiling water and stir until completely dissolved, then stir in cold water. Using a fork, poke holes into the cake. Pour Jell-O evenly over the top of cake.
Combine the Cool Whip, powdered sugar and almond extract in a medium bowl and stir to combine. Spread evenly over the top of cake. Arrange sliced strawberries over the whipped topping as desired. Store covered in the fridge for at least an hour and until ready to serve.
I worked on my birthday, July 27. Some people think “Why did you work on your birthday?” Well, the answer is simple, I have to work every third weekend, and weekends are hard to get off; besides, I get to celebrate with my friends. My work team had a food fest for my birthday with pizza, chicken and of course the beautiful cake made by Sherri Greenwaldt. The food and cards, birthday wishes and gifts all made me feel very loved. The one card I got said “58 is GREAT!” I got to thinking about this on my drive home that evening, and I have to agree, 58 is great!
Fifty-eight is great because I have a family I love, my husband of 36 years, seven wonderful children, and best of all I am a grandma to my grandson, Harrison. I have friends and family from around the globe whom I have known or met from many different aspects of my life. I enjoy working, playing and volunteering. I have found out that some things just don’t matter, and I truly love and I cherish the things that do matter. I have time to enjoy a beautiful flower, a concert in the park and a good book. I don’t worry overly much about how I look or what people think of me. I miss people who have gone on to heaven, which makes me realize it is important to time to spend time with the ones I love. I’ve grown up a lot and still have some quality time to continue to learn and grow. Hopefully I will be able to be remembered when I leave this earth, as that funny lady, who loved her Lord, enjoyed life and cared about people, (and, of course, as the recipe lady in the Mille Lacs County Times).
