1 package reduced-fat brownie mix
1/2 cup fat-free caramel apple dip
1/2 cup miniature chocolate chips
1/2 cup chopped pecans
Prepare brownie batter according to package directions. Coat a 12-inch pizza pan with non-stick cooking spray. Spread batter over pan to within 1 inch of the edge. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted two inches from the edge comes out clean. Cool completely on a wire rack (still on the pizza pan.) Spread caramel apple dip over the top; sprinkle with chocolate chips and pecans.
Yield: 12 servings.
(Chuck makes this without the pecans because the little kids do not like the nuts.)
Last week was my baby’s birthday. I can hardly believe that she turned 19. It seems like only yesterday that she was 6 months old and coming home to live at our home. I will never forget the day Chuck came to the hospital and said we had got a call from the adoption agency asking if we would add two more to our already five children. One month later, four days before Christmas, we were bringing Ben and Kallie home. The term adoption means “to take into one’s family as one’s own child.” We have been so blessed that Kallie is our “own child.” Her special actions, sayings and love keep our whole family smiling.
For Kallie’s birthday she went to a Twins game; she had her clothes planned and laid out for days ahead of time. On the night of her birthday, she had a great time going out for a Dairy Queen with her very special friend Taylor Ash. She also had her favorite treat with the day care kids, caramel brownie pizza. I think you will think it is a special treat also.
