From my table to yours: Quesadilla de Invierno (Rice flour cheese cake)

1/2 lb queso fresco or cream cheese

1/2 lb ricotta cheese

1 cup cream

4 eggs

3 cups rice flour

1 3/4 cups sugar

In a large mixing bowl, mix the cheeses together, add the cream and mix, then add the eggs and mix well. Mix in alternately cups of flour and sugar. Bake in a greased 2x12x8 inch or larger baking pan for 35 minutes at 350 degrees. Cake should be golden brown on the bottom while the top will remain pale. This cake is heavy and filling due to the rice flour. We served it with strawberries and whipped cream. Makes 12 servings.

Every year when we go to Guatemala, our plastic surgeons repair children who have had the misfortune of being born with a cleft lip or palate. In developing countries, there seem to be more instances with this anomaly, and it is thought to be because of genetic and nutritional factors.

No matter what the cause is, these children are usually ostracized and humiliated. With this surgical repair, children are able to eat normal and to appear normal. We are so blessed to have the plastic surgeons and surgical teams who give of their time to go help these children.
